How to prepare pasta carbonara in the oven
We prepare the dough for the pizza
We begin the preparation of the carbonara pizza by dissolving the yeast in the water and pouring it into a large bowl with the flour. We mix with a wooden spoon and when the dough is still grainy and not homogeneous, we add salt and continue mixing.
When we have obtained a homogeneous mass, we place it on a surface to work it for 5 minutes. We hold one end of the dough with one hand, while with the base of the other hand we stretch and then fold it on itself. We repeat several times so that the dough incorporates air, becoming more elastic.
Now we place the dough in the bowl to let it rest for 15 minutes covered with a cloth. Now we have to make the folds.

The folds are necessary to obtain a dough with more air and better structure.. We stretch the dough and fold it on itself, we turn it 90º and make another fold. We place the dough in the bowl, cover it and let it rest for another 15 minutes.
We repeat two more times, with intervals of 15 minutes of rest in between.
Once we have finished making the pleats, we let it rest in the bowl at room temperature for about 2 – 3 hours, until the volume doubles.
After the rising time, the dough is ready to be gently rolled out with your hands.
We prepare the carbonara pizza
We heat the oven to 200° for 15 minutes, while We spread the dough gently on the tray of oiled oven, using your fingertips to create an even, fluffy layer.
Once the dough is spread, a pinch of salt and a little oil. We bake at 250°C on the lowest shelf, the one closest to the base of the oven for 17/18 minutes.
Meanwhile, place the eggs in a bowl, add salt, pepper and almost all of the grated pecorino cheese. We beat until form a homogeneous carbonara sauce.

We fry the bacon cut into strips in a frying pan, without oil, and leave it slightly raw.
Then we take out the pizza and Sprinkle the mozzarella, grated pecorino cheese and the bacon.. We put the tray back in the oven, but this time on the top shelf for another 5-10 minutes.
Once the pizza has a good gratin, we take it out to pour the carbonara sauce over the pizza. More pepper, a drizzle of raw oil and finish cooking in the oven until the egg is cooked to taste.
Take the Pizza Carbonara out of the oven and sprinkle with the rest of the grated pecorino cheese. We serve the Carbonara Pizza very hot.
